Blackened Catfish Fajitas 1/17/2012


We borrowed a recipe from The Kitchn last night, Blackened Catfish Fajitas. There really wasn't much to it, just cut up the veggies, hit them in the Wok. Do up the catfish bits, hit those in the wok separate from the Veggies, and then once cooked, combine for a final round of heat, and server with Cotija cheeses and your hot sauce of choice.

Sadly, I didn't get shot of the finished product; I was too hungry, check the Kitchn blog if you want that. wow were they good though; the spice mixture alone will drive anyone in your kitchen nuts. We served everything with a side of Cuban Style black beans. Delicious.
