Roasted Tomatillo Soup
Seriously, this is worth a try. It's an excellent soup, and it gets even better with a couple of days. We got this from Kitchen Confidante.





Roast your tomatillos and jalepeno (we're thinking about adding a second one next time we make this soup)

Get some chicken for poaching.
Chopped leeks.


chop up some garlic.



Roasted tomatillos.

Leeks, Garlic, a little oil. Even red pepper flakes would work here. 

Add stock, and poach the chicken.

Blend your tomatillos and jalapenos.


shred the chicken.



now add the rest of the chicken stock, and the tomatillo puree

And add the chicken back in (after shredding)

I can't say enough good things about this soup. I had it again yesterday (we made it on sunday). It is soo good. Almost creamy, and full of flavor. Try this, you won't regret it.
