This was a really delicious preparation of salmon, especially with the accompanying roasted veggies.
To save time, instead of cutting up a potato, I used frozen seasoned potato wedges from Alexia. I placed them in a baking dish with halved white mushrooms.
Added some sliced zucchini.
Then some chopped red bell pepper.
Placed the salmon on top and added seasonings.
Topped the mixture with fat free Italian dressing.
Put them in the oven to roast, take out half way and stir.
Add kalamata olives and put back in the oven.
Serve and top with fresh parsley. So yummy!
