I really don't like canned tuna. It's stinky and doesn't taste anything like the delicious fresh tuna steaks that I make sure I get my fill of when we go on vacation to the Outer Banks every year. For that reason, I automatically ruled out canned salmon. This recipe has made me a believer in canned salmon. Now like canned tuna, canned salmon does not reflect the taste of fresh salmon, but it's a lot less offensive than canned tuna in my opinion.

One thing I did not do that next time, I definitely will is to form the cakes in advance. Maybe a full day in advance that way they will stick together much better. These ones fell apart quite easily.
This aioli (just a combo of mayo and srichacha) is awesome! I may just make a batch to have on hand at all times.
