Skillet Cajun Spiced Flounder with Tomatoes (Skinnytaste)


Skillet Cajun Spiced Flounder with Tomatoes (Skinnytaste)




Chop some garlic.


Chop some tomatoes.


Saute some onions and garlic.





Chop some parsley.




Add the tomatoes and green peppers to the pan.


Add the cajun spices and let it cook down a little bit so the tomatoes render some juices.



Lay the fish right on top.  Cover and cook until fish is cooked through.


Stir it up.  The fish will break up into chunks at this point.



Add some parsley.


Serve.  We put some brown rice down in the bowl first and then topped it with the fish mixture.  



We added a little more parsley for garnish and some hot sauce.
