Salmon Cakes

I really don't like canned tuna.  It's stinky and doesn't taste anything like the delicious fresh tuna steaks that I make sure I get my fill of when we go on vacation to the Outer Banks every year.  For that reason, I automatically ruled out canned salmon.  This recipe has made me a believer in canned salmon.  Now like canned tuna, canned salmon does not reflect the taste of fresh salmon, but it's a lot less offensive than canned tuna in my opinion.

Meat Loaf

Extra lean ground beef + portabella mushrooms + other meatloaf staples = tasty but somewhat healthy meatloaf!

Corned Beef & Cabbage/ Corned Beef Hash

Corned beef and cabbage - one of the many things I look forward to on St. Patrick's Day.  This recipe is an age old family recipe and it's my favorite way to have corned beef.

Soy Chorizo & Chicken Enchilladas (A QCQ Original)

A few months ago while on a shopping trip at Trader Joe's, we were lucky enough to sample some of their soy chorizo queso dip.  For being meatless, their soy chorizo is fab and we were immediately hooked.  We've been brainstorming many ways to use soy chorizo in as many applications as possible.  Using it in enchiladas was quite the logical application.

So this post is a little late since Valentine's Day was almost 3 weeks ago, but it was delicious enough that it deserved to be posted.

Spaghetti Squash and Meatballs (Hungry Girl)

This was delicious; as we found out the freshness/ripeness of your squash will play a big part in the texture you get on the other side. Because ours was a touch fresh, it was a little crispier than normal pasta texture. Just so you know.

Spicy Corn & Chicken Chili (Whole Foods)

Seriously awesome Chili; good kick and a little sweetness. It basically needed nothing.

Sloppy Janes (Hungry Girl)

A new spin on an old classic? absolutely! I can't tell you the last time I had sloppy joes. So it stands to reason that it was about time, no?
We went to our recent go-to recipe bank again at Hungry Girl. Gotta say, that cookbook was a solid investment:

You can find your link to the recipe here. More pics after the jump.

Chick'n Dumplings Surprise (Hungry Girl)

I don't have words for this dish. To me, it's quite simply the perfect winter night meal. Good, soul warming and filling.

You can get the recipe from the hungry girl herself, here. More pix and info after the jump.

Outside-In Turkey Tamale Pie (Hungry Girl)

I added a little cheese and Smokey Chipotle because that's how I roll, but you can dress this up however you like.

Chop Chop Beef Stir-fry (Hungry Girl)

ok, I don't name'em folks, I just eat'em. I said to Jules last night that the Hungry Girl needs to fire her marketing department. That said....the food was delicious.

I have to apologize for not getting shots of the process last night; I had to put in some miles. Thankfully my beautiful wife needed none of my help to get things going.

BBQ Chicken Cornbread Casserole - (hungry girl)

Let me start by saying we've done this twice already, and I already want it again.

This dish is made or broken on the BBQ sauce. Get something you'll like and you'll never stop making this dish. I'm sure of it.

Hot Nicoise Salad - Food & Wine

Grab the information here; sufficed to say that this was a sublime dish:

I did not capture all the steps, but it was relatively simple (see the rest after the jump):
